This cacao comes from carefully cultivated Criollo beans, prized for their exceptional flavor and quality. The beans undergo a meticulous fermentation process, lasting 160 hours in wooden boxes, where they are regularly turned and kept at 50°C, resulting in a 75% fermentation. After fermentation, the beans are sun-dried for nine days, with two turnings each day, reaching a perfect 7% moisture level for rich, full-bodied flavor.
